In Quebec, it IS a meal. You can get hanburger, veggies anything on it as well as the cheese and gravy. I had a small when I was there and I didnt eat for 2 days after LOL (although it goes against doctors advice LOL). Beef gravy is the best for it and softer, quick melting cheeses is best for that stringy effect. mmmmm (hey Misskemo)

BTW, the origins of the poutine are subject to contreversy. But it is definitely not from Montréal. More probably from Warwick, in the Bois-Francs region in Québec, where there is a big cheese plant. The first time it was actually commercialized in it's present form (fries, cheese curds & gravy) was in Drummondville, at a little restaurant called "Roy Jucep" in the early sixties. That's what the legend says...
Oh, and we write & prnounce it the same way we do the russian president's name!!

Italian poutine: replace the gravy with spaghetti sauce.
Chicken poutine: add chicken chunks to your gravy.
Hot diggity dogg poutine: chop up a few hot dog wieners, fry 'em up than add them to your mix (my personnal favorite, especially if you pick the right wiener, like those big, fat, extra BBQ style ones!)
