that's because he's got his keyboad hooked up to his computer using MIDI. midi doesn't actually produce notes. it sends information about what notes are played. A seperate program has to interpret the sounds using "midi instruments" which are then sent to a speaker. In this case he's using a midi instrument which emulates one of the 6 midi instruments the nes had.
