  • Truly cringe worthy. Sure, I've seen some so-called experts use this incorrect method. Just because a lot of people do it this way doesn't make it right. Even the correct method can be dangerous if the steel is held wrong or one's attention is diverted. Chef Gordon Ramsay has a video on this site (his 'Cookalong Live' series) with the correct method. I recommend it. Safety first, WOW! factor second.

  • 15º to 16º ? I don't think so. Only Shun Knives have 16º angle. German or any other knives have 22º angle. Beside, that is a honing steel not a sharpening steel.

  • Well....here's my 2 cents on it. I have watched butchers working many times and that is the way I have seen them do it. I think if anyone should know what to use and how to do it, it would be a butcher. True, very true you wont get the edge you would get from a hone, but this is quick. I tried his way and it worked. The cheaper steel knives take a much better edge than the stainless. rpampat, good show lad!

No true expert would suggest that novices pull a knife towards their bodies. Why perpetuate the inaccurate way to hone a knife? Besides, steels don't sharpen. The title alone tells you that that the author doesn't have a clue. If somebody gets injured using this technique, do you think he would care?

Im a butcher and have been for 10+ years you dont use a steel to sharpen your knife you use a sone for that , you use a steel to straghten your edge and only use the weight of the knife on the steel with no pressure . I also noticed when you were trying to show off you were not even puting th heel of your knife on the steel all good if you just want to stab somone. your a fool

  • Excellent demonstration of how to bang a knife into a steel rod at high speed and random angles between 10 and 20 degrees. Also very good if you only want about the middle third of the blade to be affected by the steel.

  • You obviously are educated in how to hone a knife, but yet you call it sharpening, and you called that a butcher's knife. When I was a kid I called them butcher's knives because I thought they were big, but we both know they are French chef's knifes.

    Butchers use slicing knives and cleavers, so I don't "butcher's knife" is an appropriate term for any knife.

    Awkwardly enough though, in the straight razor world, waterstones are referred to as honing it.

  • You should clarify that this is how to sharpen knifes for culinary purposes, there are different angles for different purposes and depending on what food you are preparing you may need a sharper knife, if you get a knife sharp and keep it maintained with a chef steel then it will keep its edge much much longer but not keep it like that over years time =)...and i just read some other comments after writing this, im not doing this to be an ass but a chef steel does not sharpen a knife

  • That is a honing steel. It is a physical impossibility for you to "sharpen" your knife on it, only straighten the blade. You only need about 5 passes on each side every time you use your knife to hone it properly. The faster this guys goes the farther up the tip he hones his knife and the more he misses the heel of the blade. Learn what you are doing before posting.

  • you can't sharpen a knife with a steel. a steel is only used to re align the edge or "hone" the knife. A STEEL IS NOT USED TO SHARPEN A KNIFE. if you want to sharpen a knife get some quality japanese waterstones.

I was looking for an informative video and it seems that a steel is not the way to sharpen? Does it get the knife sharp? Does it not? Or is it some kid in his first week of culinary school and thinks he knows it all? I would think that a chef like Gordon Ramsay would know what to do and he has a video just like this

  • Steels are bad. Don't ask a chef about sharpening a knife ask a knife maker, Murray Carter for example has a DVD and he's a ABS Master Blade Smith. He knows what he's talking about.

  • @Paulbump Daily use of the knife curves the cutting edge of the blade. The sharpening steel is used to straighten that edge out, not to actually make a new sharp cutting edge, just molding the existing edge back.

  • I've been looking at quite a few knife sharpening video and although this is certainly not professional, the camera shots of the "chef" sharpening the knife are the best I've found. It was exactly what I was looking for. The rapid fire sharpening at the end was silly, but the actual technique and camera angle was right on. I also found his demeanor and the kids in the background kind of charming.

  • A steel doesn't sharpen, nor hone a knife edge. It only trues the knife's cutting edge. When the knife is used, the blade edge folds over ever so slightly. The steel stands the edge back up, so to speak.

    To sharpen or hone a knife edge, sharpening stones of various grits are used.

  • sry to be so insolent. but to clarify anyway, your angle on the steel is correct, but a steel only straghtens and polishes the edge not sharpen. Since it hones the edge like this it actually will help you glide through a peice of meat, veg, ect. (reduces friction). also to use the steel safely and more consistently with your strokes, put the tip on a counter/table and slice downwards.
