@massimoesimona puoi prepararlo facendo scioglere dei dadi, o dei "cuori di brodo", o del brodo granulare. Alcuni prodotti vendono il brodo già fatto in contenitori tipo quelli del latte.

La procedura è un po' diversa. La carne adrebbe rosolata a parte e tirata con il vino, e solo dopo unita al soffritto. Ognuno è libero di "interpretare". La panna ha un suo significato, nella ricetta originale, e serve ad ammorbidire, oltre al gusto, anche le carni. Bisognerebbe usare quella fresca e non quella da cucina, densa e piena di grassi che non serve allo scopo. Se si usa la pancetta NON si ricorre all'olio d'oliva! È il grasso fuso della pancetta a dare la giusta untuosità al ragù.
Better version: add 1 tbs salt, 1 tbs dried rosemary, a pinch of black pepper and 3 finely chopped garlic cloves to 1/2 lb lean ground beef. Mix well and let stand for an hour. Finely chop 1 celery stalk, 1 carrot, 1 onion (or 2 shalots) and 3 cloves of garlic + peperoncini and sautée in olive oil on low heat for 5 minutes. Add the meat and brown (10 min). Add 1tbs tomato purée (concentrate, 2 cups of tomato passata and 1 cube of beef broth. Simmer for 30 minutes. Done!
@zeragito My version takes less time to make (45 minutes not 2 hours), packs more flavour (use herbs, garlic, tomato-sauce) and is A LOT healthier (cut the calories, sodium and cholesterol by cutting the butter, whole milk, red wine, pancetta and ground pork + garlic lowers blood pressure and boosts the immune system while tomato-sauce contains lycopene which helps prevent prostate cancer). If you really want the benefits of wine, drink it, cooking it destroys the antixoxidants.
@zeragito ooh and I almost forgot: avoid egg-pasta as it is full of cholesterol, use egg-free tagliatelle or linguini or spaghetti instead. Serve with pecorino cheese (it's low in fat, has a more intense flavour than parmesan cheese and because you're only consuming a little, no need to worry as much about the cholesterol). I like to garnish with chopped parsley as well:) Buon appetito!

90% of all cholesterol is produced by the body and the excess comes from an excess of carbohydrates turning into triglycerides. There are studies showing that even eating 5 whole eggs a day has NO EFFECT on blood cholesterol levels. Other studies show that fat doesn't have any negative effect on one's health but actually offer protection against tumors and osteoporosis, fat becomes dangerous when combined with an excess of calories and carbs. Pecorino is not low fat at all.
@IvoPiano2 The current scientific consensus is that ones level of cholesterol is based on both genetics and amount of HDL (bad chol.) versus LDL (good chol.) in ones diet. While some fat is good for you, excess saturated fat (which often comes together with HDL) is proven to clog your arteries ('heart attack food'). Dry pecorino may not be low fat, but you need so little of it for the flavour it gives, that it is in fact a low fat intake.
also, a serving of lasagna has a good balance of protein, carbs and fats and is very satiating because of the proteins and fat and has less calories than a serving of undressed whole wheat pasta. People think by eating low-fat undressed food they're eating less calories but that's never the case. A mono-meal with fat, proteins and carbs is more satiating and lets you eat less calories.
@egis27 the irony is that "my" recipe (a modification of Grandma's ) does not cut flavor, quite the contrary it packs a lot more flavor than the above recipe, and a lot less grease. As for life, I prefer to live it fully, to be really alive, in shape, attractive, full of energy and passion, not a sedentary huffing and puffing fat mess with all kinds of health issues...That's not "living".

I'm healthy and lean, my body fat is 9% and you can see my abdominal muscles. My blood tests are perfect.
I exercise daily alternating a day of weights and body-weight exercise a day of cardio exercise (sprinting, running and walking) I eat more the days I use weights and less the days I do cardio. I cut calories by eating smaller servings and avoiding sweet snacks. I eat whole eggs, full fat cheese, ravioli, lasagna, sausages (but also tuna, cottage cheese, chicken breast, yogurt..)
@IvoPiano2 you may have a lucky genetic predisposition + your active lifestyle and moderate protions may also be what is enhancing your metabolism to avoid storing excess saturated fat and LDL in your body. Do you combine your diet with other foods rich in fiber, Omega 3 fatty acids and HDL ('good cholesterol') such as nuts, olive oil and fish? This may also help. Someone else with a more sedentary lifestyle eating larger portions and less varied diet may die from what you eat:(
yes, I eat nuts, avocados, sardines and always use extra virgin olive oil to dress my veggies. Still, if you look at what recent meta-analysis say there's no evidence that an excess of butter, lard and cream is more dangerous than an excess of extra virgin olive oil, peanut butter and avocado. It's the excess (storing more than you use) that increases triglycerides not fats. Fat, even animal ones are not unhealthy. But the worst of all (for LDL) is an excess of starches and sugars
it's not healthier just because it takes less, it's just less tasty... as you know even britons have lot of "slow cooking" recipes expecially stews that takes up to 4 hours... and the reason for cooking so slow at a very slow temperature is that the food tastes better, takes more flavours from the ingredients and is also healthier (longer low temperature cooking is better than shorter higher temperature cooking in retaining nutrients)
@IvoPiano2 Some slow cooked dishes are just as healthy/tasty as quick ones (if not more) you have a point, but this is not a rule, it depends on the recipe. I personally don't think a Bolognese cooked for 4 hours is tastier than a 40 minute recipe, quite the opposite. But that is a problem with the ingredients, not the time of cooking. I appreciate many of giallozafferano's recipes, this is not one of them, no matter how authentic. Sometimes, authentic is no good imho...

Sadly, if you want quality stuff, you'll either have to look around, or pay twice as much for the "organic" stuff. Same recipe with the s*it from Coles will be virtually tasteless. That's why my version of ragu includes: roasting all the veggies, home made broth (reduced), celeriac, extra garlic, vinegar, honey & herbs.

Hello Docentino the recipe you propose is so so different from the original.....the biggest mistake of people doing ragu outside italy is that they add garlic and other no needed spices...no matter where, england germany poland....everywhere there, ragu has the same extra garlic taste that ruins all. I use tomatoes in can (most of people use tomato paste only. No need to look for bio ingredients to do good things...just follow the original recipe...and add parmigiano at the end....regards

a casa mia non ci mettiamo la panna alla fine. comunque ci vorrebbe un po' più di pomodoro perchè, il ragù alla bolognese, non è un sugo al pomodoro, ma è certamente più rosso. mia nonna ci mette anche i fegatini di pollo tritati e un filo d'olio alla fine per farlo più unto. si può mettere anche la salsiccia al posto della pancetta, ma è un'altra cosa, è detto infatti ragù di salsiccia, ed è consigliabile più sulla polenta che sulla pasta
ora lo voglio cucinare anch'io assolutamente! purtroppo il mio massimo di ragù che ho assaggiato è stato il ragù star del supermercato...ora che so la ricetta devo subito farla. Ma va bene usarlo anche per le lasagne?
nella ricetta originale ci sono anche i fegatini di pollo tritati...almeno così dicono qui a Bo...cmq questa è una delle versioni più reali del ragù bolognese...che a differenza di altri sughi è poco rosso, ma molto untuoso. Buono ma pesante.

Aggiungi tutti gli ingredienti e coprire con acqua fredda. Portare ad ebollizione e per poi ridurre il fuoco affinche il 'brodo' sobbolla (piu o meno a fuoco lento). Lascia a fuoco lento per un paio di ore (2 o 3)

Si puo' anche far rosolare le ossa prima di aggiungerle con gli altri ingredienti
@marco10matteo Posso suggerire? Per il brodo di carne usa la carne oltre che gli ossi. Il macellaio sa suggerire i tagli giusti. Uno dei miei preferiti (e non voglio scandalizzare) è la lingua. Veramente buona. La carne lessa la si può utilizzare fredda con la maionese e salsine varie o aggiungere alle insalate miste. Fa molto estate.

La procedura è un po' diversa. La carne adrebbe rosolata a parte e tirata con il vino, e solo dopo unita al soffritto. Ognuno è libero di "interpretare". La panna ha un suo significato, nella ricetta originale, e serve ad ammorbidire, oltre al gusto, anche le carni. Bisognerebbe usare quella fresca e non quella da cucina, densa e piena di grassi che non serve allo scopo. Se si usa la pancetta NON si ricorre all'olio d'oliva! È il grasso fuso della pancetta a dare la giusta untuosità al ragù.

Better version: add 1 tbs salt, 1 tbs dried rosemary, a pinch of black pepper and 3 finely chopped garlic cloves to 1/2 lb lean ground beef. Mix well and let stand for an hour. Finely chop 1 celery stalk, 1 carrot, 1 onion (or 2 shalots) and 3 cloves of garlic + peperoncini and sautée in olive oil on low heat for 5 minutes. Add the meat and brown (10 min). Add 1tbs tomato purée (concentrate, 2 cups of tomato passata and 1 cube of beef broth. Simmer for 30 minutes. Done!

@zeragito My version takes less time to make (45 minutes not 2 hours), packs more flavour (use herbs, garlic, tomato-sauce) and is A LOT healthier (cut the calories, sodium and cholesterol by cutting the butter, whole milk, red wine, pancetta and ground pork + garlic lowers blood pressure and boosts the immune system while tomato-sauce contains lycopene which helps prevent prostate cancer). If you really want the benefits of wine, drink it, cooking it destroys the antixoxidants.

@zeragito ooh and I almost forgot: avoid egg-pasta as it is full of cholesterol, use egg-free tagliatelle or linguini or spaghetti instead. Serve with pecorino cheese (it's low in fat, has a more intense flavour than parmesan cheese and because you're only consuming a little, no need to worry as much about the cholesterol). I like to garnish with chopped parsley as well:) Buon appetito!

There are studies showing that even eating 5 whole eggs a day has NO EFFECT on blood cholesterol levels. While some fat is good for you, excess saturated fat (which often comes together with HDL) is proven to clog your arteries ('heart attack food'). Dry pecorino may not be low fat, but you need so little of it for the flavour it gives, that it is in fact a low fat intake.

@zeragito you read too much about health. I'm very thin and eat what I want, i don't eat too much, and I get plenty of excercise. Everything in moderation. Cutting out wonderful classic traditional foods just to live longer is not worth it to me. No offense, but your recipe is not italian food

@egis27 What I know about health could fit into a thin broschure. But for some idiots, even that is too much reading:) I agree things should be done in moderation and you can eat whatever you want. That was not my point. My point is that the above recipe does not seem very tasty. In my opinion, it can be done better with healthier ingredients. I am not offended by your claim that my recipe is not Italian food, because I don't think you know what is Italian food (or very much at all). Ciao!

I'm healthy and lean, my body fat is 9% and you can see my abdominal muscles. My blood tests are perfect.
I exercise daily alternating a day of weights and body-weight exercise a day of cardio exercise (sprinting, running and walking) I eat more the days I use weights and less the days I do cardio. I cut calories by eating smaller servings and avoiding sweet snacks. I eat whole eggs, full fat cheese, ravioli, lasagna, sausages (but also tuna, cottage cheese, chicken breast, yogurt..)

@IvoPiano2 you may have a lucky genetic predisposition + your active lifestyle and moderate protions may also be what is enhancing your metabolism to avoid storing excess saturated fat and LDL in your body. Do you combine your diet with other foods rich in fiber, Omega 3 fatty acids and HDL ('good cholesterol') such as nuts, olive oil and fish? This may also help. Someone else with a more sedentary lifestyle eating larger portions and less varied diet may die from what you eat:(

yes, I eat nuts, avocados, sardines and always use extra virgin olive oil to dress my veggies. Still, if you look at what recent meta-analysis say there's no evidence that an excess of butter, lard and cream is more dangerous than an excess of extra virgin olive oil, peanut butter and avocado. It's the excess (storing more than you use) that increases triglycerides not fats. Fat, even animal ones are not unhealthy. But the worst of all (for LDL) is an excess of starches and sugars

it's not healthier just because it takes less, it's just less tasty... as you know even britons have lot of "slow cooking" recipes expecially stews that takes up to 4 hours... and the reason for cooking so slow at a very slow temperature is that the food tastes better, takes more flavours from the ingredients and is also healthier (longer low temperature cooking is better than shorter higher temperature cooking in retaining nutrients)

@IvoPiano2 Some slow cooked dishes are just as healthy/tasty as quick ones (if not more) you have a point, but this is not a rule, it depends on the recipe. I personally don't think a Bolognese cooked for 4 hours is tastier than a 40 minute recipe, quite the opposite. But that is a problem with the ingredients, not the time of cooking. I appreciate many of giallozafferano's recipes, this is not one of them, no matter how authentic. Sometimes, authentic is no good imho...

@ajjusti brodo di carne is used in cooking. not to serve. you have to add while cooking meat little by little, first in concentrated tomato, then little by little to moisturize the meat

Sadly, if you want quality stuff, you'll either have to look around, or pay twice as much for the "organic" stuff. Same recipe with the s*it from Coles will be virtually tasteless. That's why my version of ragu includes: roasting all the veggies, home made broth (reduced), celeriac, extra garlic, vinegar, honey & herbs.
How I miss my mom's veggie garden.. sigh

Hello Docentino the recipe you propose is so so different from the original.....the biggest mistake of people doing ragu outside italy is that they add garlic and other no needed spices...no matter where, england germany poland....everywhere there, ragu has the same extra garlic taste that ruins all. I use tomatoes in can (most of people use tomato paste only. No need to look for bio ingredients to do good things...just follow the original recipe...and add parmigiano at the end....regards

I watched Heston Blumenthal's "In search of perfection" Ragu episode in which he went to Italy and met with some "Michelin stars" awarded Italian chefs to learn from them.. and well... at the end of the episode, he Did put garlic in the sauce.. very little but still. And I can perfectly understand why. I can also understand why not... :) Best regards.

a casa mia non ci mettiamo la panna alla fine. comunque ci vorrebbe un po' più di pomodoro perchè, il ragù alla bolognese, non è un sugo al pomodoro, ma è certamente più rosso. mia nonna ci mette anche i fegatini di pollo tritati e un filo d'olio alla fine per farlo più unto. si può mettere anche la salsiccia al posto della pancetta, ma è un'altra cosa, è detto infatti ragù di salsiccia, ed è consigliabile più sulla polenta che sulla pasta

nella ricetta originale ci sono anche i fegatini di pollo tritati...almeno così dicono qui a Bo...cmq questa è una delle versioni più reali del ragù bolognese...che a differenza di altri sughi è poco rosso, ma molto untuoso. Buono ma pesante.

semplicissimo ...
ingredienti
ossa di carne (pollo, manzo o vitello)
carote, sedano, cipolla, una testa d'aglio, alloro, sale, pepe
Aggiungi tutti gli ingredienti e coprire con acqua fredda. Portare ad ebollizione e per poi ridurre il fuoco affinche il 'brodo' sobbolla (piu o meno a fuoco lento). Lascia a fuoco lento per un paio di ore (2 o 3)
Scola ... ecco il tuo brodo di carne
Si puo' anche far rosolare le ossa prima di aggiungerle con gli altri ingredienti

@marco10matteo Posso suggerire? Per il brodo di carne usa la carne oltre che gli ossi. Il macellaio sa suggerire i tagli giusti. Uno dei miei preferiti (e non voglio scandalizzare) è la lingua. Veramente buona. La carne lessa la si può utilizzare fredda con la maionese e salsine varie o aggiungere alle insalate miste. Fa molto estate.
