@delaforce202 Sorry, no offenses, but i think latte art is pretty much about the contrast, definition, shape of the patterns not about how many rosetta u can pour in a cup which could be called a hard try.Therefore i reckon Scott's done some amazing job with his art work, even without mentioning he's 2006 WLA champ.

What kind of milk do you use to get the right kind of froth? Do you pour it right after steaming? Cause that's the only why I can seem to get it right...but then I feel like I'm cheating people on their drinks, b/c when it settles...they get less. Help?
right before you pour, you should try to make your milk as homogenous as possible. you do this by swirling it in the jug and going side to side (making it fold over itself/jump slightly). this is especially important if you have let your milk sit for anywhere more than 10 seconds or so.
Well, where I work we use skim. And it's just too foamy unless you pour it before it settles. Breves are my friend :) nice and creamy, good for practicing!
Skim milk actually textures much better than full cream, but it depends if your folding the milk well while steaming. Try and get a whirlpool effect that folds back onto itself.
If the want a cappuccino then you are naturally giving less milk and *textured* milk on top. I wont say froth, because it isn't like a bubble bath, more like cream with real body. Done right ( with practice) it wont settle much at all after poor. Try spooning the "roadhouse froth" off the top with a spoon before poor.
Do people seriously think that a world champion would be making drinks with poorly extracted espresso and weak crema? Clearly he breaks the crema and swirls in cocoa powder before pouring the milk. This gives latte art more of a contrast, and IMO makes drinks more visually appealing. Weak crema and poorly extracted espresso would not be yielding latte art this vivid.

You cant really claim that this is five rosettas in one cup... id say three rosettas and two piss weak squiggles. you loose a lot of the quality going for stuff like this, are these coffees drinkable cos the crema seems pretty thin and weak.
well, the title is more like latte art: 5 rosetta in one cup. each "leaf" that is created is called a rosetta and this barista has managed to create five rosettas in one cup, which is hard to do. many new baristas aspire to create just one rosetta! the feat takes place in the last cup.
you need to do this,Begin with very cold milk. It is important to keep the milk temperature right above freezing. Keep the steam pitchers in the refrigerator also. This will allow you to steam the milk for a longer period of time to achieve the smooth and velvety texture that is required for latte art.

Its a combination of getting the milk texture just right and the espresso shot just right. Before you even try to pour it, the espresso should have good thick dark caramel crema on top, and should be very fresh. It should time out at around 25 seconds for 3 oz. Pull shots at same time as milk is steaming. Milk should look shiny. Think of "white chrome". The pitcher should have a pointy tip. Those round ones are nearly impossible to pour! Keep an eye on the tip of the pitcher in the vid
Yep - 25-30 sec for a 30ml shot, from 7g of ground beans, and poured into as soon as possible after drawing the espresso. Patience & practice also go a long way - the first time you used a crayon as a kid probably didn't look like museum grade art...
a good cup of coffee determined by 25% espresso machine 25%coffee 50%barista. Extra shot of chocolate wont make any diff, it just make the coffee creama darker so the Rosetta is more visible. The trick to make is perfectly froth and textured the milk. I noticed it will b really hard to make any art (apart from heart) in a take a way cup.
agreed...we only have take away cups at work but i love doing coffee art so i just present the cup to the customer with the lid next to it in order for them to check it out first :)
After the milk is steamed, and you've achieved a velvety texture, then there are two parts too the milk, the liquid and the airated or textured milk (fat) that hangs on the top. The trick is to blend that by swirling and then using the thick textured part to make your waves, using a "dump poor". This involves allowing the textured milk to "ride out" with the more liquid milk in the bottom half. If you swirl it makes it easier :P

when the milk is stopped so is the design. This is mediocre, lets see the stream of milk consistent from beginning to end meaning no stopping. if not you might as well use a tooth pick to make the design.

The trick to make is perfectly froth and textured the milk. I noticed it will b really hard to make any art (apart from heart) in a take a way cup.

Art in a take away cup is extremely achievable.. I have no problem with rosettas at least, although, whats the point..

agreed...we only have take away cups at work but i love doing coffee art so i just present the cup to the customer with the lid next to it in order for them to check it out first :)

After the milk is steamed, and you've achieved a velvety texture, then there are two parts too the milk, the liquid and the airated or textured milk (fat) that hangs on the top. The trick is to blend that by swirling and then using the thick textured part to make your waves, using a "dump poor". This involves allowing the textured milk to "ride out" with the more liquid milk in the bottom half. If you swirl it makes it easier :P

clap clap very impressive. Im working at McDonalds they dont teach me any latte art so i learn everything by myself. Today a customer came she ordered a latte so i decided to make a windmill, it was my 1st attempt and i got it rite, she look at me and look at her cofee and look me again, im sure she was amazed ^^ did the cocoa powder in the coffee for the contrast??

wow, why can't you just admit that Scottie is great at what he does... He didn't become the world latte art champion by cheating or getting grounds in his espresso. I'm pretty sure he knows what he's doing... don't hate - appreciate!
PS the 5 rosettas are awesome... not many people can do one!

WOW! So thats how they do it? At first i thought they juss pour in the milk or cream and then use tooth pick to draw the image or w/e. Anyways thats cool ^^ i wanna do that.

WOW! Great stuff! I'm flat out doing 1 let alone 5!! I'd be v.impressed if something like this was served up to me. Have to see if you have any hints on preparing the milk etc somewhere on here.

It is cacoa powder. This also adds something extra to the flavor.

when the milk is stopped so is the design. This is mediocre, lets see the stream of milk consistent from beginning to end meaning no stopping. if not you might as well use a tooth pick to make the design.
