Yea basically you need to animate the DOF point. Go to the camera in the buttons window and press 'i'. Select the dof. Then open up the ipo window and find the Dof curve and mess about with it until you get the effect you want.
Try and turn on the little marker to show you where the camera focus is: and add a node that defocuses your render.

hey how do you do that defocussing of teh background? I've messed around, but I cant get teh camera to focus without blocking out parts of teh shot

Sorry for the REALLY late reply.
What i meant was that I could have just done a simple video edit on a camera rented out...but intead i went the savage way and did this haha
It was alrite, just pretty unnecessary
