I'm surprised to see Heston perpetuating the myth of flaming off alcohol by lighting some of the vapours after boiling it for a couple of minutes. You need to boil it a heck of a lot longer to get an appreciable amount of alcohol out of wine - flaming might get rid of 25%.
If you're reducing the wine by simmering it for a long time, THAT gets some or most of the alcohol out. After 15 minutes, 40% of the alcohol remains. After an hour, 25%.
