Yes i agree with the bottom comment below. What cut of pork do you use? It is very lovely laced with fat. Also, what cut of beef is used for sukiyaki and beef shabu shabu? Anyone may input on questions. Oh, and before i forget- You should have killed the heat before adding the miso into soup. High heat changes miso's characteristic flavor. Just a suggestion for next time. Other than that, OISHIi!
I am not sure exactly what cut, but I think it could be pork belly, cut very thinly. The same sort that is used for bacon, except not cured or smoked.
I'd like to ask what cut of pork is being used...it looks like you use something similar to a belly/bacon cut? Where i live in Europe, pork is quite popular, so there's so much variety to choose from I want to be sure to purchase the right thing (so I can surprise my Japanese friends and make them very happy!)

This was just some sake I had in the apartment, but using cooking sake is fine - you will no doubt find the green plastic bottle of sake in asian supermarkets.
I wouldn't say that they are 'Health conscious," because implies an intentional effort to remain and stay "healthy" in one's eating. Many Japanese, especially the younger crowd, eat whatever is most convenient. Moms are still making old-style bento's and meals, but when you see what young people choose when they eat out, it's not so healthy. Sushi is making a good come-back, though.
