People have made up entire fantasy solar systems. To add a planet you sould have to add to the solar system file the planet name, orbital parameters size, shape, moons and their parameters, etc. A cool example of this is the "Star Wars universe" People have added a couple of planets and moons around a star in our galaxy. Theve even added the "Death Star" as a moon of the moon Endor.
These custom files are avaiable from the Celestia web sites.

If you are talking about doing a simulation - you can 'become/orbit ' the space craft or pretend to be a space craft and 'fly' around other objects. While this is more like real space craft - it is not at all like star wars space fights.
You probably need to downlaod an alternative texture. Celestia is not like google earth or NASA worldwind - in that the texture maps are stored on your computer. the best resolution will be like 10 meters, but only for limited areas.
i like how you can go foward in time in Celestia. you can see exactly where all the plants and comets will be in the year 2020 :D

You can load alternative textures - the more detailed ones are stored in an heiarchial format.
People can make their own textures, but it is complicated.
