Parrying is only available in P Groove. You press towards (or down if they are attacking low) just before an attack connects.

Just Defense is only available in K Groove. It is similar to parrying, only you press away instead of towards.

Rolling is only available in C, A, and N Grooves. Press Light Punch and Light Kick at the same time to roll. While Rolling does allow you to pass through normal attacks, throws will still get you.
