I tried Pho for the first time when my son took me to a Vietnamese restaurant on Yonge Street in Toronto and it was absolutely FANTASTIC! A massive bowl was less than $7 and the flavour is so good that I can't even describe it. Considering I'm afraid to try new things, this says a lot about Pho. If you're scared to try to cook it, go and have some at a restaurant. The Vietnamese know what they're doing!

Hey Jack, you can season the beef with some crushed black pepper if you like!
You can add green onions for more flavor too, boil water in a separate pot and give the noodles about a 30 second dip, it softens them up easier and helps you prepare noodles for the family :)
They also have meatballs served with the soup, look for the key words "bo vien"
I personally mix the hoison sauce, sriracha, and lime in a small plate to dip my meat, you should try it!
that was a good pho bo, but try changing up some of your spices you do not need to use the standard ones. every vietnamese family adds a special spice to up there own pho. oh for those that not know bo is beef in vietnamese

Note of warning lol for those of you who are trying this. If you don't like very hot food, play with the amount of Siracha that you add. I love the jalepeno and siracha too, but that was A LOT of siracha lol. Awesome job though, made it look easier than I thought. I may even try Chicken stock, with chicken with the same principal as you did with the Beef Pho :D Thanks for posting.
A tea infuser works just as well as a cheese cloth when making a bouquet. It lets out slightly more of the oils that would normally be absorbed into the cloth. I reccomend just leaving the cinnamon stick if you do it that way since they take up the most room.
You should try Hot Pot. You sit at the table with a pot of boiling broth in front of you, and you can throw in anything from beef slices to whole shrimp to cow stomach. It's really good (minus the cow stomach).
I really love your show Jack... the thing is, though, that there's a lot of things that you forgot in your pho... and I won't even talk about the fact that your noodles aren't even cooked properly, nor the fact that they're not the right ones lol... Nice try though ;) If you wanna eat great tasting Pho, you really gotta come to Montreal (Quebec, Canada)...
Jack I recommend you try a Japanese noodle called Somen. It is in your international or asian isle of most grocery stores. It is made with sea salt and whole wheat. Its nice and thin and a great healthy substitute to angel hair pasta. Very good.
Jack - I suggest adding beef balls as an add on. It tastes great and you just add it to the soup. Also, you put the bean sprouts at the bottom of the dish before adding the noodles in and you put the meat at the top so that the soup cooks it when it's poured in!
Vietnamese here. You did a great job, but some diffences I would reccomend are basically the same as wowkid. You could add Oxtail, Brisket, Flank, Tendon, or Tripe, along with others.

@sacraficialangel7 If you havent had pho you would know but i'll explain his broth isn't even boiling, try putting midly hot broth on a piece of 1/4 or 1/2 inch beef, it wont cook, the beef needs to be paper thin, its rare on his pho and it looks cooked thats only because the hot water made it turn gray, put hot water from the tap thats not even boiling on a steak, it'll turn grey but stone cold in the center, so i wish that his beef was fresh if not good luck with food poisoning
Would it work, if instead of combining all the ingredients in the small white bowl, i added the meat, vegtables, and herbs into the pot with the Beef Stock, cause if i cook this i will be cooking for 5 and by the time i have spooned out five it would have cooled down.

good job Jack ! Just a few things : perhaps you could slice the meat thinner ? I know this is easier said then done but I know there are some Asian supermarkets that sell frozen thinly sliced beef. Another thing, if you have time try to make the soup base from scratch instead of using store bought beef stock. The base will taste better but in a pinch beef stock works well :D
That looks delish! I would suggest thinner slices of meat - I've seen thinly sliced flank steaks in the supermarkets (intended for rissoles or rolled meat dishes) which could be cut into strips which would be perfect.

Jack, you already mentioned, that there were lots of variations of this dish. Would it be akward to use ingredients like e.g. tofu, chinese cabbage, sea food or sea weed?
@IsaakHunt In my neighborhood, at least, fish sauce is a pretty common condiment for pho. Tofu, however, is evil no matter where you live. Unfermented soy causes all kinds of health problems, and no, Asians have not really been eating tons of tofu for centuries, no matter what you have been told. Tofu is bad for you. Eat chicken or beef instead.
being vietnamese, i must say, he did a great job, somethings i would do differently such as cook the noodles in boiling water before putting it in the bowl. as well as put ox tale or other meats in the bowl. the beef was cooked when he poured the soup on.
Instead of tearing up the basil, put it on your palm and slap is a couple of times firmly with your other hand, this bruises the leaf and brings the basil flavour right out of the it =)
I love Pho, though not as much as Wonton Soup. Sadly you can only get it in the city, and I only lived there while I was in college :( so I dont get it very often, if at all. I have to make it at home.
I love making it, though! Beef and chicken bones, boiled for several hours with onion and ginger and stuff, and beef tendon! You have to braise the tendon in the oven to make it turn to gelatin, then you cut it up into tiny pieces and it's like jello noodles!
Also, your beef was a little on the thick side, but it's fine, it's all personal preference. Personally, I take a good steak like Rib or Strip Loin (strip is especially good because it's all one muscle without fat seams in it). It's easy to cut into thin strips, because the steak is already cut into a 3/4" piece. Not half as awkward as that big chunk you were working with.
PS: Look in your spice aisle for Chinese Five Spice. It's got the cinnamon and anise and stuff in it already.
Something that I do with Pho is i take the Sriracha, Hoisin Sauce, and some Soy Sauce, and I mix them all together in a little saucer then add it to the soup. Thanks for the vid.
Jack do a (Redo) That's not really how the Asains or Viatmenese cook it or make it... And I've been eating pho for about... 10 yrs? And I Am Asain. You have to boil the water, put in the onion/seasonings... Then you rinse out the noodles then take them out then when your ready put the noodles in so that the noodles are not wet when you eat it... And you are missing "Oyster sauce".
@Standard420247 its mixed pepper corns. Those mixes have a bigger range of pepper flavor. I love them.
And the red/pink ones in those mixes, are actually not even pepper. Which becomes even stranger because the "real" pepper actually is red when its completely ripe, but you can get that one almost nowhere :(
Hey Jack! I'm sure you've probably already read this somewhere in the comment but it's better if you boil plain water and then dip in the pho noodle and throw in the broth right afterward. That way when you eat the noodle it's soft and cooked. I've never seen anyone simply put the noodle in warm water and eat it like that before, but hey there's a first for everything and if it taste good than it taste good. You should also look for Banh Pho Tuoi (fresh pho noodles) it's usually in a clear bag.
Sorry jack, you don't use "stir-fry noodles" for Pho. You gotta go to an asian market to get the actual correct noodles. I'm disappointed in you, jack :(

by wrapping it in foil and turning it on the stove.

Another tip. If you wanna cut the meat really thin. Keep it in the freezer for about one hour.
That way it is really firm and stiff, and easy to cut. And when your done cutting, it will already be completely soft again.

I love Pho, though not as much as Wonton Soup. Sadly you can only get it in the city, and I only lived there while I was in college :( so I dont get it very often, if at all. I have to make it at home.
I love making it, though! Beef and chicken bones, boiled for several hours with onion and ginger and stuff, and beef tendon! You have to braise the tendon in the oven to make it turn to gelatin, then you cut it up into tiny pieces and it's like jello noodles!

Also, your beef was a little on the thick side, but it's fine, it's all personal preference. Personally, I take a good steak like Rib or Strip Loin (strip is especially good because it's all one muscle without fat seams in it). It's easy to cut into thin strips, because the steak is already cut into a 3/4" piece. Not half as awkward as that big chunk you were working with.
PS: Look in your spice aisle for Chinese Five Spice. It's got the cinnamon and anise and stuff in it already.

Something that I do with Pho is i take the Sriracha, Hoisin Sauce, and some Soy Sauce, and I mix them all together in a little saucer then add it to the soup. Thanks for the vid.

Jack do a (Redo) That's not really how the Asains or Viatmenese cook it or make it... And I've been eating pho for about... 10 yrs? And I Am Asain. You have to boil the water, put in the onion/seasonings... Then you rinse out the noodles then take them out then when your ready put the noodles in so that the noodles are not wet when you eat it... And you are missing "Oyster sauce".

@Standard420247 its mixed pepper corns. Those mixes have a bigger range of pepper flavor. I love them.
And the red/pink ones in those mixes, are actually not even pepper. Which becomes even stranger because the "real" pepper actually is red when its completely ripe, but you can get that one almost nowhere :(

Hey Jack! I'm sure you've probably already read this somewhere in the comment but it's better if you boil plain water and then dip in the pho noodle and throw in the broth right afterward. That way when you eat the noodle it's soft and cooked. I've never seen anyone simply put the noodle in warm water and eat it like that before, but hey there's a first for everything and if it taste good than it taste good. You should also look for Banh Pho Tuoi (fresh pho noodles) it's usually in a clear bag.
