not sure if you know this or not but in oklahoma it is illegal to keep any game fish (yes that includes blue cat) that you catch noodling.. flathead is the only non-game catfish

it all depends on the size of the fish. 1 to 3 lbs are great much bigger than that, they tend to put on more fat with the age
