In Azerbaijan (home), sturgeons are like a disease, you get them for 60 cent/kg, very tasty (sry if i offend someone) best fish i ever ate only 1 central bone / skeleton, but here in germany its so expensive and rare € 9-10/kg. I didnt know this fish was so old, but imho its not so necessary to worry about his extinction, there are loads of them.
