I'm never quite sure if people are joking or not so I'll answer in the assumption you're asking seriously. "Celibate" the word they are using, means essentially chastity. Ellers joined an order whose members traditionally take a vow of celibacy meaning they aren't allowed to engage in sexual activity because they've vowed not to. Hence why it's a running gag considering the irony for why Ellers joined the order.
