Oak is uned to remove harmful chemicals created during distillation, like Methanol. In herbal medicine oak chips are placed in the distilled liquid to achieve the same end. They, like the barrels must be slightly toasted first, over and oak fire of course. You could age your own brandy or wine this way. Get some oak slivers/chips and toast them so they are black charcoal on the surface. Leave for a few years if possible and they will add character while making the alcohol smoother.
