That is either a freshwater crayfish. I used to have freshwater crayfish in my aquarium and they were master escape artists. They love getting out on land (but then can't get back into the tank if you don't find and rescue them!) I expect this is what would have happened at least once a month in my house if I had my cat and my crayfish at the same time. Long before I got a cat mine escaped and I found him a month later in the back of the closet. RIP crawdude....
