Does removing the paper from the tops of the cakes make any difference? I would think maybe it might increase the likelihood of an errant spark setting something off ahead of schedule.
No, the only reason there is paper, is to mostly remove sparks (but you can also use garbage bag which is a much better technique than foil). And the reason the paper on top is removed is to no create a mess around the setup, so when it's dark you won't have to search for debris from the paper. I always use garbage bag. I don't much care about a mess.
Yes, the wireless fireworks firing systems are the way to go. Funny thing setting up a display with a system is as much work sometimes as a professional display. But the results are worth it.

i need a fireing system this year, i fuse my whole show together and time the fuse it sucks but it works ok. i like the setups you do very cool
