I am not sure this video encouraged people... you make it sound like a complex operation.

Selling fillets is one of the easiest way to cheat on a fish's freshness... you can't see the eyes, the gills and the skin and it becomes hard to really know how old the fish you are buying is. I suggest buying whole! Moreover, as with steaks, the bones add a LOT of flavor. Just remove them after it's cooked.
