Yes, you can do that. When using a drag & drop based inventory for example, you can create a slot that only accepts items of a single category (e.g. weapons) and when a weapon actually gets dropped onto it you just call the script method to change the player's weapon (i.e. Player.SetWeapon(weaponName)).
