  • You should have hand flattened the dough and added the cinnamon and raisins on top then rolled into a loaf.

    Yes, your method yields more robust cinnamon fragrance at the end. I usually make in your way. It takes much more time to incorporate raisins, cinnamon, sugar and butter. So I made this video for a quick recipe to go along with an easy care-free no-knead method.

    I buy it from a local bakery. It will keep about 4 weeks in a refrigerator.  Do not freeze yeast, the culture will die.

    Yes, it is no-knead bread. Still you have to stir and mix the ingredients before the fermentation.
