You could use a pasty brush to spread the oil around...which you shouldn't have to even do if you prepped the first rise bowl with oil. You'd only need an 1/8th of a teaspoon at best in order to not interfere with the flavour. Dunno what you're getting up to using that much...and is that olive oil? You've never supposed to use that with such mild tasting things cause it's overpowering...so much for expert...

i tried this and it came out perfect yes the seqences are a little tedious but for a first timer they are great and the bread is great. u can let ti rise an hour longer and get an italian bread and i left the water in the oven the whole time with no problem thanks for the recipe couldn't ahve done it alone

You shouldn't totally degas your dough after the first rise. Also, the wetter the better is the mantra with baguettes, as the steam makes your bread nice and crunchy, and a dry dough will leave a really tight crumb.
its much easier in a machine, cause it takes you about 8 minutes to mix. also you don't use oil to make sure it doesn't stick, if oil isn't a baguette ingredients why would you use it to not stick, you want to use bread flour to make sure it doesn't stick.

you can use any flour
all-purpose flour is good (T55) you can use every flour that are higher than T55 but not T45 (pastry flour) so yes you can use bread flour
