I have made this both ways and a fantastic kitchen aid can pulverize the peel and give you a lot more apple flavor and nutrients. However, those products run around 300 dollars. I find the sieve is very time consuming, messy and labor intensive.
This method is great and still very tastey while saving time.
You can also use jars of apple sauce, but they are not as tastey as your own apples.

20 min seems too long. It depends on your sea level, but I play it safe and boil for 15 min. That is max. requirement.
