  • First of all you are the shit(in an awesome way of course.) Secondly, thanks for the tip about heating from underneath I never would have thought of that. Thirdly, do you think I could sub greek yogurt for the mayo(I have been doing it in other dishes because I too think the fat free mayo is chemicals and I am on a diet? Lastly, you have made me a cayenne freak now. Thanks I walk around craving hot foods all the time. HAH!! Thanks. :)

  • On TV (and this channel) I keep seeing the pan being put on the top rack of the oven. The broiler element must be on top, but in every oven in every place I've lived, there is a separate "broiler" on the bottom. I'm so confused and frustrated by this, because you can't control how far away from the element the food is located. Urgh.

  • @567Katii Its a function of an oven that lets you cook something on really high heat, to finish off a dish, for example you have a dish that is finished cooking but you want to top with melted cheese. just a minute or two in the brolier and the cheese is melted. You can also use a broiler to cook a dish that dosen't take a long time to cook, like what was done to the salmon in this video.

  • @spadedz so are you gonna nitpick chef john (or any ordinary human in that case) for not using organic greens? it's when the amount is significant it becomes toxic. but it's not, that's why laws don't ban the foil. and i'd rather trust the law, and chef john, rather than someone who' overly paranoid. sure, you can avoid foil, but saying that chef john using foil ruins the stuff is going overboard.

  • Yes I can see it, however aluminum leaks into the food and distorts the taste, better to cook with stainless steel or copper. If you heat the pan before hand the food want stick to it.

  • @spadedz not true tt food doesn't stick if pan is preheated. and it would be a bit far fetched for chef john to suggest the exact pan material to those who are new at cooking (which is his intended audience) - can't expect them to buy a new pan just for this fish right.. foil simplifies things and i don't think it distorting the taste is a subjective thing i guess
