I had tuna like that once before. All I'll say was that it had an extremely fishy taste. Kind of like the smell of dead fish along the sea shore. For living in the middle of the country in the winter time, I would expect it to smell like dead fish.
Why aren't you on Food Network or PBS yet? You are awesome! You don't just teach recipes. You get down to the basics. That's very refreshing in this day and age.

I always get my tuna like that in restaurants, or when I'm lucky enough to find a good piece of tuna. Most meats or fish I like a bit more cooked, but it works with tuna well.
