are the trays themselves screens? airflow weaving an alternate path through the trays is clearly not enough air flow. perhaps also; the trays are just to loaded with to much product which is more moisture than the system can process. possibly, if the exhaust were of multiple metal pipes which if were longer/taller and painted black, would heat up and create a draw for the ventilation?
A couple things to think about 1, is your unit are tight 2, have you looked at the designs for the air coming in the top and going down then back up a false wall chimney most of those videos mention that the reason they make it that way is the humid air falls. with high humid things being dried that may be a better design for you.
Your solar motor is way too small regarding the amount of moist material you have put in. A little steeper angle might help to direct the flow in the right way. As hot air is less dense than cold air, it moves up whereas hot moist air on the other hand is more dense than hot dry air, which is why it has to be pushed up.
Hence, size up your solar panel or change it to a design that compensates for it

Interesting setup. If the exhaust stack was made taller, and made of black materials you might get a better chimney effect.
