Choose what you want to go with in the situation. I'm more likely to use そのことない for the "playboy" sich, and "それほどでもない for Japanese compliments... because... I've worked pretty hard at getting to where I am, and I don't want to decline the WHOLE compliment ;)
I find arrogant Westerners in Japan to be particularly obnoxious, but I think you have to strike the right balance between sincerity and becoming just another social robot. No amount of keigo, tatemae or formalized humility will ever gain you full societal acceptance as a foreigner, so why bother? Be polite because it's the right thing to do, not because it's gonna impress the easily impressed Japanese masses.
Agreed. I like to think of using humble phrases and behaviors as a good practice in keeping my ego in check. If you have a foreign face, and can say "Watashi no namae ha..." you'll be flooded with so many compliments that it's really easy to start thinking too much of yourself.
Oh that's awesome, I knew it wasn't good to be showing you're so good might even be better than the rest them, but didn't think about being humble like that (although that's currently how I act whenever someone says I "Speak" Japanese lol). Thank for the tips~

If you wanted to break it down like that, "hodo" is "to that extent" and "demo" here can be thought of like "even," like in the following phrase:
"Nihonjin demo wakaranai nihongo :
Japanese that even Japanese people don't understand."
