cast iron can get overly hot for eggs. Carbon steel has better heat manipulation. Cast iron once hot stays hot. FOr heat manipulation cooking cast iron inst the best choice. CArbon steel is better for that
@dkhalevskyy You have not let the pan heat up enough. Add the oil after the pan has heated on medium low heat for about 5 minutes, and heat another minute.
Do you use soap to wash your skillet? Won't it be unhygienic? (Sorry, I don't mean to be rude but I've been taught to wash everything with soap to be thoroughly clean.)
@tubreeze I know how you feel, I had to get used to this concept. No, a seasoned cast iron pan should never be washed with soap! Google this or go to Lodge cast iron. My grandmother had trouble with this concept also. She would try to wash my grandfather's cast iron with soap (he was a chef) and he had a fit! Use very hot or even boiling water to clean. The seasoned surface provides a coating , soap would just stick to it, and ruin the cooking surface.
@tubreeze You can scrub it out with kosher salt and rinse with hot water. Because you always want to preheat a cast iron skillet before using it, you're killing off any bacteria that may be on it.

@210482fmj you are right, it is tricky, but this is why it is heated slowly on low heat.
Also, I sometimes take it off the heat as cast iron holds heat for a long time, and cook it off the heat, return it for a few minutes as needed

I've been using cast iron now for 5 years and will never buy a Teflon or similar type pan again.
