I think there isnt any particular perfect Romaji, you can write it how you want I guess. Like here we use a Dutch type of Romaji. Like Shintoism gets Sjintoïsme, no Japanese would understand it, but its so that we can understand how to pronounce it now if the Japanese would understand it. So everbody can use a different kind of Romaji for Japanese words, as long as you understand it.

No, you say "Ohayo" when you're talking to people that you're close to. "Gozaimasu" is when it's to strangers or teachers or acquaintances. And since I don't know any of you guys personally, it's easier to just say "Gozaimasu".

As mentioned before "ohaiyo gozaimasu" is more of a formal/informal issue.
However, "Konnichiwa" as some Japanese speakers may or may not notice is spelled "Konnichiha" in hiragana.
The same applies to "Konbanwa.
Now to explain what this all means.
When literally translated "Gozaimasu" is actually a VERY formal synonym for "Des" which means is,to be,or some form of "existing".
When literally translated "Konnichiwa" really means "This day..." and "Konbanwa" means "This evening...". As to why IDK.
