My guess would be that gravity assists you in that way. You can have gravity assist in removing most of the rum from the bottle by having it turned upside down. It would be a waste to have to remove the rum used to rinse the bottles by a suction or another method. Less messy as well if the rum can only come out from the bottom.
I can never wrap my head around the fact that there can be such a demand for products like this. How can they be selling so much rum that they need to bottle that much every day. I guess people live their liquor.

@Typhoon5124 its because time is money. with the population growing, there r going to be more demands within a certain time limit. new projects that companies work with usually take years to complete and once its complete they need to distribute it as much as they can for profit to pay off the expense that were made during the process of completing the new project and to ensure enough for newer projects. and thats y automated machines r created to increase productivity. but i know how u feel.

At the Souviner shop I was ablle to purchase thier brand new product called " Bacardi Reserva Limitada". I'm saving this expensive and lovely looking beauty for something special, like my Graduation from College.. Or possible wedding I'd like to have.
