hello manjulaaunty, thanks for sharing the recipe. i followed it completely but the end result was a bit thin kheer and i noticed that at the end of boiling the milk when i added sugar suddenly the milk became quite thin and then the consistency remained thin even after boiling more...can you please help with suggestions? this also happens when i add sugar to sooji while making halwa...so basically sugar releases lots of water....

I used about a cup of cooked rice to a cup of milk, then added some fresh milk afterward and it was delish!!! Next time, I will follow her recipe exactly though. I'm Spanish (born in US) and this pudding is almost exactly like the one my grandmother used to make. Instead of cardamom, she used cinnamon, and no nuts. Otherwise, it's the same.

You can make kheer just with milk, rice and sugar if want to add the extra flavor you may try cinnamon or vanilla extract as you asked.

No, it won't taste the same, but it will be edible. You're definitely missing out if you don't add the cardamom/saffron and nuts.

you can use practically any rice, rice will be cooked in milk I think that tast batter then adding the milk in water cooked rice.

If you skip these two key ingredients you end up with regular rice pudding. The saffron and cardamom give the essence of kheer.
