Edward went against the aws of alchemy in the first episodes (in fact he even used alkahestry!) and since you could make a homunculus every time human transumtation was performed, it didn't make sense that they were the seven deadly sins, as many more could have been created. Not to mention, Scar's brother was a freaky weirdo and Lust joined the good side, without any lust involved :P

Also , it was specifically stated on multiple occasions that a homunculus could only become fully formed when fed Red Stones . Otherwise , they`d shrivel up and die soon after being transmuted . This of course excludes Wrath who gained his human form in The Gate , technically making him like half homunculus , half Gate Baby .
@1993MovieMan Edward made statues move by themselves by touching the floor in front of him. He is giving life to rock, which is completely impossible! And did it ever explain why Wrath was different?
1 . He was transmuted from his own human remains so they couldn`t be used against him though like the others , he could be fatally weakened if he lost too many Red Stones .
2 . He was the only homunculus who could perform alchemy due to having Edward`s arm and leg ( until The Gate took them back ).

Ah , but they did all personify or atleast evoke the sins they represented in some way :
Lust : Was made from lust and her beauty inspires lust in others ( `specially Gluttony who sees her as a Mother-Figure ) .
Gluttony : Pure id , he feels the need to eat everything around him , even people !
Envy : Envies The Elrics `cause his " Father " , Hohenheim , loves them more than him .
Greed : Betrayed Dante and his siblings out of avarice , was locked up for it .
