One time, the AI put one of their items before the jump on Mario Circuit 2. They kept jumping over and over again in an endless loop and never finished the race until over 7 minutes into the race. I got first place with over 5 minutes to spare. 2nd place was 7'51'00 and then they started to finish after that.

They don't cheat, they just don't play by the same rules as you. The SNES wasn't powerful enough to really allow for an AI on 7 computer racers at once, so the programmers took shortcuts. To keep things competitive they go faster when you're ahead (So they're always on your tail) and so that they don't have to understand how every item works or how getting items works, they're just given a power and the ability to jump. Computer opponents adhering to the same rules wasn't standard at the time.

3:26 That's actually just a general gaming glitch. If the target rounds a corner or if the rankings change right before someone throws a red shell, the shell changes course in all kinds of weird ways. Once, I ended up hitting myself with a red shell because of this. >.<

I always found it funny that on 150cc, they can all turn on a dime. There's one track, with a 45 degree turn, and they all turn in PERFECTLY. It's like they're on a magnet, and it moves them so they don't have to turn.

It often sounds like sour grapes but many developers program games to cheat to compensate for the A.I. never being as good as a human brain.

At least it's not like Mario Kart 64. If a computer gets hit with a shell or bomb and they're not onscreen, they have instant recovery (certainly makes the blue shell less useful). Also, they can go through any map obstacle if they're not onscreen, such as the trains, chomps, and boulders. And the rubber band effect ensures that you can never stay far ahead of anybody for long.

there is a nasty trick for the fourth track. Place a banana peel right by the separation between the leftmost speedboost jump. (just check where the racers go, they always use the same path) if you place it correctly.. they will ALL try to jump over it, basically breaking their ability to cheat you (they will get stuck jumping OVER the jump, having to redo the same part of the track over and over again)
