I am becoming more vegan everyday and this means I read books, use the internet, talk to my nutritionist and I replace the nutrients found in meat by the same nutrients from non meat sources. That looks delicious, however I am a carnivore (majorly, eating 1lb minimum a day) so I cut my veggies smaller so they are more meat-enhancers than part of the texture. My best dishes are meatloaf's and thick meaty chili's, not the redneck simple recipes. Because I care about nutrition of the veggies, some of my recipes involve really chopped-up raw veggies mixed in to the cooked product. Food processors are magical, so I do not have scurvy. ;)
