This is called ADR. Automated Dialog Replacement or Automatic Dialog Recording. A lot of production audio is unusable due to noise in the background so they re-do the dialog in the studio. Around 70-100% of dialog you hear in a big Hollywood movie is actually recorded in the studio and synched to the video later.
