Why so much antagonism guys? Tomato seeds don't belong in a lot of recipes. For example, when I'm making a sandwich, I get rid of the core as I don't want a sopping wet sandwich. The seeds are also too bitter for some applications. If you think this is a waste, you should go see how much quality food restaurants actually bin on a regular basis.
Very cool tip btw. I used to always chop them in half and use a spoon to get the seeds out.
In most restaurants presentation is one of, if not the most important aspect of a dish. Sadly, the cores are too unevenly shaped and colored to be good enough for presentation purposes. If you were making a tomato sause, you would not want the seeds, and this would be a quick way of getting them out into the open for removal. However, not a single part of the tomato, if the tomato is of good quality, is unusable enough to be thrown away.
I suppose you can overcharge in your restaurant and not care but I put way too much effort into growing my tomatoes to waste so much. Probably don't pay your waiters/waitresses enough to depict an honest price on your menu either huh?
She is making a specific choice when she uses those areas of the fruit. She's controlling the quality of her dishes when she decides to core her tomatoes.
If you want to actually appreciate food, accept the fact that there are many ways to do something. Restricting yourself in any way narrows the variety of what you create.
That's the true waste - not this chef's tomato cores...
You go through a lot of tomatoes because you're throwing it all away! The middle's the best part!

@iPezzei If you're cutting out the best part of the tomato, you're doing it all wrong!

I know, she IS wasteful, isn't she?. Especially after she said all the extra bits could be used for stock or sauce.
GAQ01 2 years ago 3
Yeah, and the core is basically the biggest part of the tomato. All she has left is the skin on the tomato...

why core them? the middles by far the best part.
tehbluething 2 years ago 88
its not like your going to throw the core away.
OurenV2 2 years ago
i didn't suggest they throw them away or think that they did, just questioned why. ( the middle is the best bit :) )
tehbluething 2 years ago
@tehbluething pay attention dipshit. for Salsa. If you want the core in your salsa you like some watery ass salsa.

@tehbluething you are the first person to say that to me.
arichards518 1 year ago
@tehbluething but by some types of dishes you need tomato without core and you can use the core for tomato sauce for instance ?

@tehbluething agree! those are the juichiest parts

@tehbluething true but only the hard bit a the top needs to go imho
spekbakker 7 months ago
@tehbluething the seeds and the membranes are the parts which get very sour when cooked, by coring them you can get a "sweeter" sauce or salsa.
PerfectionObsessive 6 months ago 5
@tehbluething if you want to use the tomato in a recipe without a lot of extra water, for example to make a sauce.
