There is only one way I can think of that spirits could manifest as men, the same way Jesus did, by being born. Did they find some way to be born as men? Did they grow up with a terrible secret, that they had previous lives? The bible doesn't speak of this but I'm thinking that the story is told from only the spiritual viewpoint without the actual mechanics. There seems to be no explanation. But we know that some believe the sons of God were righteous men going after pagan wives.

You can't always read the Bible and expect all the words to express the most simplistic and obvious meaning. And yes you can "apply" these to the Bible with great results without commiting heresy (Bible tells you to pray to God for understanding while reading it right? Angels cannot manifest into humans, therefore cannot procreate with the females of that world , as beautiful as they may have been. Giantism was not due to the fallen angels but was a characteristic of that time, a possibilty due to the different atmoshpere perhaps but certainly not due to Lucifer.
