add a keyframe at the beginning of the text and crop to whatever size you want. then add a keyframe at the end of the text with the size of the visible area being smaller then the other one. that way, the text will appear to zoom in...

if you want it to zoom out, at the last keyframe make the visible area bigger than the first one.
