I think you could have just ignored the threat to your rook and played 35...c3. There are no cheap mate tricks by White and he would have had to sac another piece to stop the pawn since his rook was conveniently jammed in by your pieces. :P
I guess it is just an instinct to avoid mate on the back rank.
White could play f6 with immediately threat of mate. Ok, f6 would fall to the knight, but it is usually a bad position with a pawn chain blocked by enemy pawns and rook on back rank.
well if white plays g5 and Nxg5 is treathning a fork of king and rook and the pawn in the center, which the rook has to either move away, or check. and they dont seem strong, they fade special after N takes the g5 pawn white has the f and h pawn isolated plus the center pawn can be attacked after the N jumps to f3, but yeah what more can you ask from a 5 minute game is gut feeling, so he did right with the move he made it seemed very forcing which the guy gave a piece

ok, i calculated some more:
White could play g5, the knight would have to take or else f6 is deadly.
but if knight takes f6 still is deadly.
black cannot cover e8 square. (King f8 - Bishop b4)
do only move might be: g6xf5. but then then the pawn structure is horrible against a dark-squared bishop.
there could be an escape, but it's good to follow instincts in a blitz game ;)
