I have just become familiar with the remarkable DOI CHAANG coffee from Thailand (thank you Robert) which is not only top quality but pays the people twice Fairtrade prices and gave the Akha people 50% of the Canadian company..P.Pachecos, Calgary Alberta
I'm interested how he aquires his beans. Does he inspect them at the time of purchase? My experience with online dealers is they will rip you off. At some point, they will unload really bad beans if you show up with money, online. Samples may be better than what you shell out a hundred dollars for. Roasting is one thing. Getting high grade beans is another, all together.

1st crack sounds like light popcorn poping
2nd crack sounds like rice crispies but louder
there is about 3-6 min between 1st and second crack

Why don't this guy shut up so I can concentrate on the cracking sounds? Rule number one must be that one has to stop talking to listen clearly.
