HK only has around 8 million ppl - there are speakers in the mainland (Guangdong and Guangxi), and overseas communities in Asia (Thailand, Indonesia, Singapore, Malaysia etc) and western countries have communities that speak it.
The HK travel industry speaks Mandarin. Outside, it's hit 'n miss. A BJ-er may be understood more or less, but have to struggle to understand a reply in Cantonese. It depends...

Síujé gwaising a? when addressing a female formally - "what's your name, Miss (or Madam)?".
Sīnsàang gwaising a? is used when addressing a male. Sīnsàang is "Sir".
Less formally, you can ask Néih sing mēyéh a? You surnamed what
Informal and talking to younger ppl,
say Néih giu mēyéh mèhng a? You call what name What's your name?
