  • As long as you mash them enough the type of masher makes no difference, it is a poor workman who blames his tools! Hell, you can do it with a fork! It's the butter and especially the milk that help to break down the potatoes to a creamy consistency

  • My Mum taught me this method and I've been using it for years; white pepper and all. Nice to see it's Chef approved! :]

    The only difference is I heat my milk for 30 seconds in the microwave, it just seems to make the potato fluffier and prevent any gluey texture.

  • Never making mashed potatos before, I destroyed these. What are the portions of white pepper & salt added around 4:30. I guest 1 teaspoon of white pepper & 1 teaspoon of salt. AWEFUL. haha.  I would greatley appreciate the help.

  • 31 years I've been cutting my potatoes into tiny pieces!!! It's such a chore that I hate making mashed potatoes!!! But now with your great technique I don't have to!! I feel like a huge weight has been lifted. Thanks:-)

  • @nevi108 yeap, the same here. I'd cut my potatoes in small pieces too and my potatoes came out wrong, so I would cut them even smaller the next time.. eventually giving up on mashed potatoes until I found this vid myself.. You are not alone my friend!!

  • you don't salt the water when cooking potatoes..

  • @davis3378 because salts acts to denature proteins, in same manner as acids and bases. There is thus no need to cook potatos in salty water.. Add it after the ingredients have been slow cooked. That is what high-end restaurants do... the ones that actually care about the food they serve.

  • @whisperchat That's probably true, but it has no practical significance. When you make potatoe puré in restaurants you make a lot of it, and it is very important that you don't overmix it. If you don't salt the cooking water you'll have to mix in all the salt afterwards, which is messy and you run the risk of overmixning the puré. Thus, all things considered, i think salting the water is a good idea.

  • @davis3378 ordinary potatoes do not contain much more than a few % of proteins, yet when given the overall quantity of the ingredients those few % is actually more than it sounds, and as destroyed proteins have not scientifically been proven unhealthy (as of 2011) the fact remains that they no longer can serve the function proteins (and amino acids) have in the human body.

    Scientists have now developed the transgenic potato which contains around 60% proteins.. don't waste it.

  • Actually you want a waxy potatoe not a starchy.If you get a smaller potatoe cook with skin on peel after it protects the potatoe.And a hand ricer works well :)

  • I made theses this evening--they are great; however, I hd to use a mixer, as I could not find a potato masher like you used anywhere.

  • Great recipe, couple of things to improve this though:

    Soak your chopped potatoes for 30 minutes in water at 60-65 deg C before you simmer them.

    Add some grated parmesan and egg yolks at the same time as the milk, and simmer the milk first.

  • very nice, chef john. i particularly like that chive garnish, but as for me, one of the best utensils i've invested in was a potato ricer. you will never have smoother, fluffier mashed potatoes (if you go for 'em that way...)

  • I use russet potatoes also but I am going to try the golden potatoes, the Yukon Golds. This is because I went to a good restaurant and the potatoes were so light and fluffy I was thinking maybe they used Yukon golds. I'll see today if I like russet or Yukon Golds better for mashed potatoes.
