  • Omg is it refreshing to see homemade enchilada sauce being made - the right way. Reminds me too of my times in the kitchen with my gradma and mom - making this, fideo, carnitas, mole, rice, beans, etc... If you're using can sauce, I feel for you - cuz you are missing out - especially on the family time, can't beat it.

We buy the chillis dried and we have to soak them and its a pain in the but for me and my sisters; but since its powdered it makes it much easier and quicker to use, thank you thank you, i cant believe non of my relatives thought of this before ..   • I have been looking for the recipe for the orange colored sauce for awhile now. This is the only one I found. It is made totally different from the deep red sauce. Thank your Grandma Liz for sharing and you for posting.

  • i been watching how to make red enchilada sauce all day on you-tube about 60 of them she was the only one that keep tasting it making sure it was season perfect. she is a true cook. the sauce looked great.

  • It's fun to watch an experienced home cook.  Not surprisingly, her grandson was focused on getting the exact quantities, but she doesn't measure. She watches the texture to know when she has the right proportions. That's particularly true on the first step: making a light roux. It doesn't matter what fat you use--a roux can be made with butter, oil, lard or shortening--the secret is the proportion of fat to flour and careful temperature control. It's all about technique, and she's got it.

  • i just like to add that for my enchilada filling diced potato's taste very good with this kind of enchilada. i put a nice sized potato in a pot of water on high. when it starts to boil bring the temp. down to medium. let it tenderize for 15 minutes on medium. take the potato out, first let it cool down....then chop up potato in small cubes, about the size of a dice. when you're done chopping add the potato to your meat. mix real good and let it tenderize until the potato is soft.

  • wow some of these comments have gotten pretty rude since the last i checked about a year ago. ever heard of respect your elders? people have their own ways of cooking food. just because someone makes food different than the way that was taught to you doesn't make it less authentic. my grandma's (RIP) recipe was similar to how this woman makes her enchilada sauce minus the flour. my grandma was from mexico, salamanca, GTO to be exact.

  • I wish I had a Grandma Liz. I lost my Grandma and never got or learned her Mexican recipes. Keep up the good work and document all her cooking. I bet she has many more just as good.

    There are three things I love about this video: 1. The love in the kitchen between generations. 2. The simplicity of authentic cooking. 3. The valiant effort to work with Grandma to ensure the proper amounts of ingredients necessary to remember this particular sauce.

    Thank you for sharing this intimate video. It's heartwarming to hear a Grandson speak so gently to his Grandma.

  • nice video man wtg! if you didnt ask her so many questions she prob would have been done in 5 min lol my wife is the same way after so many times cooking the same thing they dont need measurements...look n feel n taste.as for me when trying somebody's recipe i'll go by there measurements and then the 2nd time i make it i'll add or subtract to my liking but thats how it's done. thank you grandma gonna try this this week if i can find that chili powder,nice!

  • you could also use shortening i'm not sure about vegetable oil.

  • @mickeyl01 You can use shortening, oil or butter. The standard measurement is equal parts fat and flour. This is the base for almost all gravies, and many sauces, it is called a roux. If you learn to make this base you can make anything from enchilada sauce, to chicken pot pie filling, to dark gravy (by browning the roux.)

  • With all respect, great recipe, but it is not healthy to use hot water from the tap, because of all the sediments that are in it from the water heater.

    the heated water from a pan that was mentioned is a much better idea

  • Im from Las Cruces, New Mexico and I have never seen Enchilada Sauce made that way! Im sure it is delicious, don't get me wrong... This is just another way to prepare Mexican Red Enchiladas! Over here we boil, strain and get the sauce straight from the pods! Thanks!
