They aren't taking the lambs away from the ewe, they're moving them to the nursery, ewe and lambs. Putting them in a wagon or sling is a way to get the mother to follow. As you saw in the video, the other ewe there wanted them as well. Thats one reason to put them in the nursery, gives the mom and babies time to bond w/out another ewe stealing them, especially if its a new mom.

I went lambing and it was amazing, i would recommend it to everyone. That ewe was very well behaved, wish they were all like that !!
