Because dates are over 100 on the glycemic index (white bread=100) and should not be consumed by individuals with blood-glucose response problems. They shouldn't eat anything over 70, and, perhaps not that high on the GI. Certainly the GL (glycemic load) is also of concern here.

That cake is not as healthy as you say it is... Agave = sugar, therefore YES there is sugar in that cake. Plus the agave syrup is so high in fructose that it's almost as bad as hfcs. Do your own research on agave. Also, dried dates = sugar. So eating a lot of this WILL make you fat. However, I agree it's much much better than a regular flower-based cake.

The glycemic index of dates is through the roof, but yeah the nuts slow it down A LITTLE, but it is still a lot! The worst thing is not that... The worst thing is that medjool dates are purely and simply concentrated sugar. For example, one medjool date of about 28g (1 ounce) contains 19g of sugar, and 2g of fiber... The sugar is roughly 50:50 glucose fructose.
One date won't fill you up at all. If you eat like 4 dates, it's even worse than drinking a freaking coke...

the original health problem i had largely healed with fruits, fresh green juices, plain nuts...came back with the uncooked dishes. the two worst physical experiences of my life.

Question - my DD is anaphylactic to nuts (probably the only major obstacle to my RawJourney) and I was wondering if I could substitute the walnuts for any/specific seeds (like, pine nuts, pepitas, sunflower seeds etc?)
So I substituted the nuts for equal parts of pepitas/sunflower/pine seeds/kernels. Turned out brilliantly. I also added FINELY chopped dried apricots (I would've added cherries if I had them) and a touch of vanilla. Hubby reckoned it tasted just like panaforte but without the nutty chunks, and with the added bonus of the ganache icing/topping.
Amazing recipe. My outlaws are gonna love it, and not even KNOW it's RawVegan!
Since this is a raw cake, could one add male ejaculate to it to give it a creamier taste?
I would need about a dozen handsome men for this.
