@kiminokami He talks as if he knows everything, but he's often plain wrong on the show. And he's so damned sure of himself. Pasta does not need to be boiled in a gallon of water (it's been tested). 2% milk has NOT had 98% of its fat removed, it's had about 50% of it's fat removed (was 4%). These are things I'm remembering off the top of my head. He's one of those know-it-alls who thinks he knows more than he does.

I wish he could give some other option than vegetable shortening... Just 2 or so grams of trans fats a day increases your risk of cardiac disease by 23%. What happens if you decide to go with lard? Would that affect the texture that much?
you could try the 0g transfat per serving (notice that it's only per serving, but it's til better) shortening. try it with lard and compare it with shortening to see how you like it.
many meat products contain some level of trans fatty acids. they may be awful for you, but i'm guessing our bodies have a little bit better time metabolizing them. as nutrition science becomes more advanced, i feel that many synthesized things GRAS in our food will come under scrutiny.
YES! I did this simply because I despise shortening. I understand all this argument about trans fats and hydrogenated oil somewhat, but really I'm just going for non-processed. Lard and other solid fats are what the food companies were going for when they created Crisco. There's no way Crisco can match the taste of bacon fat either. Where's your proof that "hydrogenated oils are as deadly as trans fats"? I've heard of the studies that link trans-fatty acids to being bad for you, but how are you linking fully-hydrogenated with partially-hydrogenated? As far as I know, only partially-hydrogenated counts as a trans-fatty acid, by definition.
Until you can get proof of some sort, however, it'll remain a "my opinion vs. their opinion" sort of deal.
The Mayo Clinic is not "a company regulated by the FDA". The Mayo Clinic is a not-for-profit medical practice. The information they provide is based on the current scientific consensus and not some corporate interest, as you claim. Hydrogenated oils are not necessarily great for you, but they are certainly not deadly. The problem with trans fat is its chemical structure, which is difficult for human digestive enzymes to process. Just being "processed" isn't the problem.

It's the same logic behind aerosol cooking sprays like Pam can claim to be fat free because the serving size is so small, that it is below the threshold. Make your own foods and read ingredient labels, and you won't be suckered into buying junk.

I use bacon fat and butter. Yea it's not the most healthy option, but it has no hydrogenated oils. Also, the texture and taste come out just fine.
