awsome, all pizza chef have own tecnique to open base many years ago i work with one guy ( born in ejypt and raised in france ) he open bases just like this cool :D
This is called FITIR. The "Fatatry" is the guy who makes the Fitir. Fitir is baked in the oven right next to the guy. Nearest thing to Fitir may be the French "mille-feuilles" pastry.
Delicious when served hot and crisp with jam and sugar!
