  • I do not agree with this recipe. The alcohol from the wine not burnt off, the beef was not marinaded and the meat would be better if it were braised for 5 to 8 hours.

  • Thank you! I was worried I was being too cynical lol. For my money Thomas Keller has one of the best braising recipes for beef. It's exceptionally good.

  • Nice idea, but she left out some critical points, as noted, marinade overnight for a start, but sh didn't say how to make the 'sauce' or gravy as we call it. Was it from a reduction of the braising fluid or something else? Details details. not half baked please.
