@iChef100 There is normal granulated sugar. Then there is caster sugar which is finer (sometimes called powdered sugar). Then there is icing sugar or confectioner's sugar which is like a dust!

Titli, which type of vanilla are you using? Many types of vanilla essence (especially here in the States) often contain between 15 to 35% alcohol, which is not halal...
@peeleykeeley Vanilla *essence* is usually a solution of vanilla flavouring with some caramel. Vanilla *extract* usually contains alcohol. You may also be able to find something called "vanilla sugar" which is vanilla flavoured sugar.

@shyic I think it asks for oil on health grounds. Using that much butter would probably give you a heart attack just by looking at it!
The nice thing about the grated carrot it that it gives a bit of texture to the cake. Using mashed carrots would still probably be as moist, but you would lose the texture.
