Any particular type of ukemi may not be appropriate for all students. The usual disclaimer - use discretion, practice safely, and don't exceed your physical limitations!
If I did that my neck would snap like a twig! My neck vertebrae are fused and I have limited flexibility in my neck, shoulders and down my spine - hence why I do not - cannot - do forward rolls in class (although given the right circumstances, I can maybe do one a month, in a throw, but never in practice).
We do something similar and call them "seiza rolls". It's how I learn to overcome my fear and mental block of rolling. And the fear was so bad I could not roll. I love the core exercise you came up with. Also, have you tried doing koshinage from seiza? It's a great way to learn it without the fear of a two to three foot fall. The key is you have make sure uke wraps their arm around nage. Nage never stands up, just tips uke over. -a recovering ukemi scardy-cat here (and USF alum).
MY sensei incorporates this in some of our warm ups. Not really a favorite in class but I have begun to really appreciate its value. Especially for new student learning how to do ukemi.
