Chili is a humble food. There are probably as many recipes for it as there are families in America. I use fresh and canned ingredients in my own with ground beef. Every chili recipe I've seen has ground chilis (there are several kinds available here in California), fresh peppers, meat (for carne), beans, onions, garlic, and usually tomatoes as the base. From there use your imagination. For us, beer is a favorite ingredient along with green garden tomatoes when available.
Although I'm not subscribed to Nicko, I watch his videos quite often and the food he makes always looks so good! All the recipes look so simple and it's just a matter of time until I try one myself.
All the haters have to realise that these are (as far as I've gathered) simple and budget meals, and they still look amazing! If you want food that they'd make at a 5* restaurant, go watch Masterchef or something

Instead of cumin, try ground ancho chilies and more of it. It's mild. Also, try cubing your beef or for gravy, use ground beef and thicken with flour.

I would NEVER eat that... The meat had a very strange too bright colour raw, it seemed like plasticine and besides that you used too much canned ingredients! Is it so difficult to peel a tomato and add it in the blender? It's way healthier and more tasty
@metapixusion I cook beef all the time and mine looks not that bright, it looks more pinky and stuff, that thing looks extremely bright, let me tell you that this is not a normal colour for the beef, I have used fresh beef, not from the supermarket, beef from my grandpa's cottage and it's pink not that colour. I don't know why it looks like that, maybe he picked the wrong meat, maybe it was packed and contained preservatives I don't know but he should be concearned

San Marzano canned tomatoes especially are some of the best tomatoes you can buy and I use them all the time whenever I make sauce and other things. They have a richer flavour than fresh tomatoes. Have a chat to some Italian people you come across. They all swear by canned tomatoes to make pasta sauce. Not everything in a can is bad for you.

Not everyone has the time or the money to use completely fresh ingredients 100% of the time. I agree that fresh is definitely best and lots of canned foods are bad for health but I strongly disagree when it comes to tinned tomatoes. They are a fantastic ingredient and the snobbery against them is silly.
a little masa corn flour will thicken that up a little better and give it more of a classic chili look. You also might try cooking the meat in a pressure cooker, after about an hour it will be falling apart (which makes it perfect for chili)
Looks tasty. My variation would have been to dice the capsicum the same size as the onion and used ground chuck/sirloin. I would have also added chilli powder, cinnamon and nutmeg to the seasoning. I would have garnished with fresh cilantro in addition to the dollop of sour cream (full fat or nothing - go easy on the portion) and serve with warmed flour tortillas and a wedge of lime. My little twist!

Wow some of you needs to get the stick out of your asses. This is his version of chilli con carne.. everyone has their own version.. I'm Malaysian and this is my fave food and I have my own version according to my own taste..I like to use mince meat though :) Then eat it with rice, yummmyyy.
